Meet Paul & Our Staff
Paul Perello was born on the island of Sardinia off of the coast of Italy. His study of the culinary arts led him from Hotel School in Germany to some of the finest hotels and restaurants across Europe. Eventually Paul landed in New York, where he spent more than 20 years refining his craft. In 1988, Paul uprooted, brought his knowledge and taste to Winston-Salem, and his entire kitchen staff followed.
On February 26, 1988, our restaurant—with its atmosphere of white linen and vibrant art—opened its doors. Each member of the opening day staff has remained with us ever since, enabling us to maintain an unparalleled consistency in the quality of our dishes.
